Southwestern Style Salad
While temperatures are beginning to dip to cooler digits in parts of the U.S., it’s never a bad time for a tasty Southwestern Style Salad.
A quick dish to fix after a long day of work or when you just want something a little different. Easy to prepare, this salad is colorful and flavorful featuring avocado.
Take 4 Roma tomatoes – half, seed and dice into 1/4-inch cubes. Place in large bowl. Add 1 tablespoon minced garlic, 1 small jalapeno (seeded, finely minced), 1 can (15 1/4 ounces) whole kernel corn, 1 ripe avocado (seeded, peeled, diced), 2 tablespoons sugar, 2 tablespoons lime juice, fresh ground black pepper to taste, fresh ground kosher salt to taste, 1/2 small onion (finely minced), and 6 strips of crisp bacon (finely chopped).
Toss together. Put fresh spinach on plates, add salad and top with your favorite shredded cheese and serve.
What could be more simple than that? It doesn’t have to be a hot, humid day to enjoy this cool, delicious salad.

What a great looking salad! And you’ve packed so much flavor into this. We eat salads throughout the year, although I admit we probably eat more during the warm weather months. But this is a winner whenever it’d be served! Thanks so much for this.

Hi! This salad DOES look lovely! I bet it is delish! Was wondering if you use any dressing? I can see my grandkids thinking that a salad isn’t salad unless they pour on some ranch dressing. lol. But, I bet it is plenty moist and doesn’t need a dressing between the corn and the tomatoes. I miss summer tomatoes already!

Wendi, this salad is delicious without a dressing but you could use Ranch or some type vinegarette. This time we used a balsamic vinegarette.

Charlie, the nights are beginning to cool down a bit and we’ve had a few days with cool temperatures so far. This is definitely a salad for all seasons.
It’s the perfect time of year here for salad!!
I love that my garden is sharing a bounty at the moment too. I looked down the ingredient list and I have tomatoes, spinach, chilli and spring onions growing so this recipe would be perfect to use those ingredients.
